The preparation: In a large bowl, put all the ingredients together (the egg whites, the sugar, the vanilla, and the lemon zest). Stir the mixture very well and thoroughly with a whisk or a spoon, so that they are fully combined before whipping begins.
The whipping: Transfer the mixture to the stand mixer bowl. Whip on medium-high speed until the meringue thickens well and becomes a stable mixture.
The piping: Preheat the oven to 100°C. Line a baking tray with parchment paper. Using a pastry bag or a spoon, form the meringues onto the paper.
The baking: Bake (essentially “dry”) the meringues for 1 hour. They are ready when they are light and detach easily from the parchment paper without leaving any residue.
The cooling: Turn off the oven and leave the meringues inside with the door slightly open, until they cool completely and become crispy.
